Saturday Brunch – Eggs with Avocado and Salsa

DSC_0484Ok so the days of lying lazily in bed at the weekend, reading the paper with a cup of tea are well behind us. My husband and I are trying to teach Daisy that mornings are a time for quiet, so reading is a great activity. Currently she wiggles and rolls between us in bed with her book that looking increasingly eaten rather than read. The reality is after repeatedly being kicked in the ribs, hair pulled and face played with by Daisy I begrudgingly accept the fact it’s morning and get out of bed.

My husband has benefitted from this early rising as I occasionally I’ll then make Saturday brunch. I’m not sure you can actually call it brunch if it’s eaten before the hour of 9am? This is a brunch I made up for my husband one day from a random selection of items in the fridge (yes we have an unusually high number of avocados in the fridge due to weaning Daisy), but it is super yummy so I thought I’d share it with you.

Saturday Brunch – Eggs with Avocado and Salsa

Saturday Brunch

Serves 2

Ingredients

  • x4 eggs
  • a small packet of smoked lardons
  • x 4 slices of cornbread
  • butter
  • 4 tbsp Greek Yoghurt
  • x2 pinches of dried chilli flakes
  • 1 ripe avocado
  • juice of 1 lime
  • handful of coriander leaves washed and chopped
  • 14 cherry tomatoes chopped into quarters.

Method

  1. Lay out x2 full size plates
  2. Boil the kettle
  3. Make your guacamole and salsa first.
  4. Halve and stone the avocado and then mash it up in a bowl with a fork.
  5. Squeeze the juice of 1 lime into the avocado and stir
  6. Mix in 2/3 of the coriander leaves and a pinch of chilli flakes.
  7. Place half the guacamole on each plate.
  8. Mix the chopped tomatoes with a pinch of dried chilli flakes.
  9. Place half the tomatoes on each plate and garnish with the remaining coriander.
  10. Toast the corn bread and butter it.
  11. Dry fry the smoked lardons (I find there is enough fat on them so you don’t need extra oil)
  12. Whilst frying the lardons,Β poach x 4 eggs in a pan of boiling water (for instructions on how to poach the perfect egg click here.)
  13. Place x 2 pieces of toast on each plate and top each with a poached egg, tbsp of yoghurt and a quarter of the smoked lardons.
  14. Serve with a smile and tell your other half they are doing the washing up!
